It’s green time! Green peas, green cauliflower, green onion, green kale, green asparagus, green dill etc. From those goodies I made a lovely vegetable soup. This green colored broth is very intense and delicious. It is packed with all the flavors from new greens that make the soup taste like summer!
SERVES 4:
BROTH:
- soup greens
- bunch of flat leaf parsley
- 1 spring onion
- bunch of lovage
- salt
- pepper
SOUP:
- 1/4 kg new potatoes
- green peas
- 1/2 bunch of dill
- 1/2 bunch of kale
- 1/2 green cauliflower
- 1/2 bunch of green asparagus
- cottage cheese
Add 5 l cold water to broth greens, cook for about 1,5 h. We should get about 4 l. of broth. We will use half of it for our minestrone soup, and the other half we can refrigerate. Wash potatoes, cut them into smaller pieces and boil in the broth with chopped dill. Add other sliced greens in order of cooking time and simmer until soft, season with salt and pepper. Serve soup topped with some extra dill and cottage cheese. Delicious!
