TORTILLAS WITH BROAD BEANS PASTE AND EGGS

D71A7108When I posted the photo of my supper on Instagram last week I got surprisingly nice response. This encouraged me to publish this super tasty and super simple recipe. Ready made tortillas with different fillings are a great way for using seasonal ingredients without a lot of work. The combination of flavors described below is terrific 🙂

INGREDIENTS, SERVES 2:

  • 2 small tortillas
  • 2 eggs
  • 8 chanterelles
  • 1/2 kg broad beans
  • 1 clove garlic
  • 4 spoons olive oil
  • salt
  • cheddar

GARNISH:

  • rocket
  • basil
  • peppermint
  • olive oil
  • avocado

Cook the broad beans in salted water until soft, peel and set a handful aside. Blend remaining broad beans, olive oil, garlic, pepper and salt.

Preheat the oven to 180 ºC. Spread olive oil and beans paste on tortillas, sprinkle with grated cheddar, form a little hollow in the middle and crack the egg into it. Place remaining beans and sliced chanterelles around the egg. Bake ca. 20 minutes.

Serve with avocado and fresh herbs sprinkled with olive oil.
