Broad bean hummus with chanterelles

D71A7711The mixture of sesame tahini paste with broad bean suited very well in one of the previous salads. Therefore I decided to reiterate this harmony of taste in a bit different combination with delicious fried chanterelles. The proportions below would serve at least three, depending whether served as separate dish or as a side to meat. Personally, all I need with this dish is a glass of home-made lemonade to cool me down. Enjoy!

HUMMUS:

  • 1/2 kg borad beans
  • 1/4 cup tahini paste
  • 1/2 lemon lemon juice
  • 2 cloves garlic
  • salt
  • 50 ml ice cold water
  • False flax oil

CHANTERELLES:

  • 100 g chanterelles
  • 1 clove garlic
  • 1 tbs butter
  • 1tbs chopped parsley leaves

Cook broad beans in salted water until soft, then peel. Set aside a few beans for garnish, blend the rest with other hummus ingredients. If the paste is too thick, add ice cold water.

Fry the chanterelles with butter, then add chopped parsley.

Serve the hummus with a splash of false flax oil, peeled broad beans and fried chanterelles. Bon appétit!
